These summer fruit overnight oats are a prefect meal prep breakfast for summer. Made with only 6 healthy ingredients, they come together in 20 minutes and will make your house smell like summer!

Ingredients
for the peach & apricot jam
6peaches and apricots500-600g
β cupchia seeds~20g
for the overnight oats
1bananaripe
β cupplant milk
β cupoats~80g
1tspcinnamon
1tbspchia seeds~10g
Instructions
To make the peach and apricot jam
Wash the fruits. Remove the seeds and cut into bite-sized pieces.
Add to a metal pan (or metal saucepan) and cook for 10-15 minutes until the fruits are soft and slightly falling apart. You can add water to prevent burning.
Mash the fruits with a fork or potato masher until no large pieces remain.
Transfer to a bowl and add the chia seeds. Mix everything and let sit for ~5 minutes. Add more chia seeds if the jam is too liquid.
To make the overnight oats mixture
While the peaches and apricots are cooking, you can prepare the overnight oats. In a mixing bowl, mash the banana with a fork.
Add the remaining ingredients and combine.
To assemble the summer fruit overnight oats
Take two mason jars. To the bottom of each, add ~ ΒΌ cup of the peach & apricot jam.
Divide the overnight oats mixture evenly between the two jars.
Top with the remaining jam. You can garnish with walnuts or any other toppings you like.
Notes
Instead of peaches and apricots, you could also use nectarines.
