These Brownie Peanut Butter Bars Are Awesome for Meal Prep
I know that I have a sweet tooth. And I also know that I will probably want to have something sweet throughout the week for dessert or a snack to feel satisfied. So I love prepping a few healthy snacks that will satisfy my sweet tooth.
These bars can be easily stored in an airtight container in the fridge (or freezer if you want to store them for longer). I love to enjoy them straight out of the fridge a little cooler, but feel free to let them sit on the kitchen counter for 5-10 minutes before you eat them.
How to Make These Brownie Peanut Butter Bars
What I love about bars is that they are so versatile and I get to experiment! I love adding different nuts, seeds, nut butters and interesting flavors such as vanilla, cocoa powder or cinnamon.
To make these brownie peanut butter bars, you will need dates, cocoa powder, chopped almonds, peanut butter, oatmeal. And salt, of course. Salt makes anything with peanut butter and chocolate better, in my opinion.
The trick to getting smooth date caramel is to boil some water and then soak the dates (after removing the pit) in the hot water for about 15 minutes. You don't even need a food processor, anymore, because you can easily mash the dates with a fork.

Ingredients
- 6 medjool dates, pitted and soaked
- ⅛ cup cocoa powder
- ¼ cup chopped almonds
- pinch of salt
- ⅛ cup cocoa powder
- ¼ cup chopped almonds

- 1 tbsp peanut butter
- ½ tbsp oatmeal
- ½ tbsp oatmeal
- more salt
Instructions
- Start by blending the dates in a food processor until you have a date paste.
- Add the cocoa powder and blend again.
- Add to a bowl and stir in the chopped almonds and salt. Transfer to a container.
- Combine peanut butter and oatmeal and add on top of the brownie date mix. Optionally add more salt and almonds for decoration.
- Store in the fridge/freezer and cut into bars once set.
Notes
If you don't have a food processor, don't worry. Simply cover the dates with boiling water for 15 minutes and then you can mash them with a fork.
