Making overnight oats is very simple! You mix oats (preferably rolled oats) with your favorite type of plant milk and let it sit in the fridge overnight. Then, we can add different add-ins/toppings like spices, nuts, seeds, fruits... to make it tastier. Mix the oats and milk directly in a mason jar to save yourself some dishes.
How Do I Make My Overnight Oats Sweeter Without Adding Sugar?
A simple way to make your overnight oats sweeter without adding sugar is adding a very ripe banana. The riper a banana gets, the sweeter it becomes. And also easier to mash. Mash the banana with a fork, and then mix in the oats and plant milk.
How Long Can You Store Overnight Oats?
Overnight oats need to be stored in the fridge. They can be refrigerated (in mason jars for example) for up to 4-5 days. The longer you store them, the more liquid the oats will soak up and the softer they will become. Store them at least overnight for a nice consistency.
How Long Does It Take To Make Overnight Oats?
To prepare the overnight oats, you only need about 5 minutes to mix everything together (or a little more, depending on what things you add and if they need to be prepared). Then, you should put them in the fridge at least overnight so the oats can soak up the liquid.
Can You Eat Overnight Oats Immediately?
When you take overnight oats out of the fridge, you can enjoy them immediately. Depending on your preferences, you can also let them warm up for a few minutes.
If you don't want to make overnight oats or you want a warm breakfast, you can also warm up the oats in the microwave (preferably store them in a bowl instead of a mason jar) or you can simmer the overnight oats mixture on the stovetop for 5-10 minutes instead of placing them in the fridge overnight. Then, you might need a little more plant milk/liquid.
What Do You Need To Make These Overnight Oat Recipes For Fall?
Here's what you need to make apple pie overnight oats, pumpkin pie overnight oats and carrot cake overnight oats.
- apple pie overnight oats: To the base recipe, we are adding apple sauce/compote, fresh or caramelized apples, almonds and cinnamon.
- pumpkin pie overnight oats: To the base recipe, add pumpkin puree, pumpkin spices (see recipe below how to make your own), a liquid sweetener, cranberries and pumpkin seeds.
- carrot cake overnight oats: To the base recipe, we are adding a grated carrot, vanilla, nutmeg, cloves, walnuts and raisins (can be left out or replaced with cranberries if you're not a fan of raisins).
How To Make The Overnight Oats Base Recipe
Step 1
First, take a large mixing bowl and mash two ripe banana with a fork. It is okay if some lumps remain but it should be a puree-like consistency.
Step 2
Next, add in the plant milk, oats, flax seeds and cinnamon. You can leave out the cinnamon if you like for a neutral overnight oats recipe, but I have found it adds a nice subtle flavor to the oats.
How To Make Apple Pie Overnight Oats
Step 1
Cut the apple into small pieces. If you want, you can caramelize it before adding it to the oats. To do that, preheat a high-quality non-stick pan on medium-high heat and add the apples. No sugar or oil needed. Deglaze with a little bit of water after a while and stir occasionally. After 5-10 minutes, they should be soft and golden-brown on the outside.
Step 2
To the overnight oats mixture, add apple sauce, almonds and more cinnamon as well as the apples and mix well. You can save some of the apples and almonds to add on top of your overnight oats jar.
How To Make Pumpkin Pie Overnight Oats
Step 1
If you don't have pumpkin pie spice, you can make your own by mixing ground nutmeg, ground ginger and ground cloves. See the recipe below for specific amounts.
Step 2
To the overnight oats mixture, add pumpkin puree, a little bit of liquid sweetener (like maple syrup), pumpkin spice, pumpkin seeds and cranberries. You can save some of the pumpkin seeds and cranberries to add on top of your overnight oats jar.
Step 3
Add pumpkin pie overnight oats mix to a jar. You can add some plant-based yogurt as layers in between if you like.
How To Make Carrot Cake Overnight Oats
Step 1
To the overnight oats mixture, add a grated carrot, raisins, walnuts, a drop of vanilla essence (or a pinch of vanilla sugar) and spices (a pinch of ground nutmeg and a pinch of ground cloves). You can save some of the raisins and walnuts to add on top.

- 2 bananas very ripe (200 g)
- 1 cup oats 120 g
- 1 cup soy milk 250 ml
- 2 tbsp cinnamon
- 2 tbsp flax seeds 15 g
- plant-based yogurt optional for serving
for the apple pie overnight oats (1 serving)
- ¼ cup apple sauce 80 g
- 1 small apple
- ⅛ cup almonds 15 g
for the pumpkin pie overnight oats (1 serving)
- ¼ cup pumpkin puree 80 g
- 1 tbsp maple syrup or another liquid sweetener
- 1 tbsp pumpkin seeds 10 g
- 1 tbsp dried cranberries 10 g
- ½ tsp pumpkin pie spice to make your own, mix ¼ tsp ground ginger, ¼ tsp ground cloves and a pinch of ground nutmeg
for the carrot cake overnight oats (1 serving)
- 1 carrot, grated 40 g
- 1 tbsp raisins 10 g
- ⅛ cup walnuts 15 g
- pinch of vanilla sugar or drop of vanilla essence
- pinch of nutmeg ground
- pinch of cloves ground
Instructions
to make the overnight oats base
- In a large mixing bowl, mash the banana with a fork.
- Add the oats, soy milk, cinnamon and flax seeds and mix well.
to make the apple pie overnight oats
- Wash the apple, deseed and cut into bite-sized pieces.
- (this step is optional) Add the cut apple to a saucepan on high heat and cook for around 5 minutes, until it has become golden-brown. Stir occasionally. You might need to add a little water to prevent burning.
- To ⅓ of the overnight oats mixture, add the apple sauce and almonds and combine.
- Either mix in the apples into the oats mixture or layer them with the oats mixture in a mason jar. Optionally add some plant-based yogurt. Place in the fridge overnight to set.
to make the pumpkin pie oats
- To ⅓ of the overnight oats base recipe, add the pumpkin puree, maple syrup, pumpkin seeds, cranberries and spices. Mix well.
- Add to a mason jar (optionally add some plant-based yogurt). Place in the fridge overnight to set.
to make the carrot cake overnight oats
- To ⅓ of the overnight oats base recipe, add the grated carrot, raisins, walnuts and spices. Mix well.
