The first time I made seitan, I pretty much hated it! I was really frustrated because I had seen so many recipes that used seitan on the internet and they all looked great. But my seitan just tasted bland and had a questionable consistency.
So I began experimenting. Experimenting with the recipes and what I put into my dough but also the cooking technique. You know, there are A LOT of different cooking techniques for seitan. Cooking it in vegetable brew, steaming it, wrapping it in a cloth and baking it in the oven...
The Best Cooking Technique For Delicious Homemade Seitan
After a bit of experimenting, I finally found the method that works best for me: simply baking it in the oven. It doesn't cause the seitan to get mushy like when I cooked it in vegetable broth, and it is also super easy. Just form a flat disc, place it on a baking sheet and it goes into the oven for 40 minutes.
To take the texture of your seitan to the next level, you can even fry it after baking. This is totally optional but I think it adds a nice crispy outside. Let the seitan cool and then cut into strips. Fry them in a non stick pan for a couple of minutes on both sides.
How to Make Seitan and What to Do With It
I just told you about the best method to cook seitan, which is bake it in the oven. But how do you actually make the do? There are also different ways like adding mashed beans or chickpeas. Personally, I've found the easiest way is to take the seitan powder, add your favorite mix of spices, tamari or soy sauce for that umami flavor and some tomato paste for a bid of moisture.
Do not add too much water at once. Add a little, mix, add a little more, ... You should get a sticky dough that is quite hard to work with but not so dry it crumbles apart. The important part is kneading the dough for at least 5-10 minutes so that the gluten can activate and a stretchy dough can form.
My favorite ways to use seitan is to add it to a curry, use in a veggie stir-fry or make seitan steaks for BBQ.

- 1 cup seitan powder
- 1 tsp each: paprika, turmeric, dried oregano, dried thyme, onion powder (or another spice combo you like)
- 2 tsp salt
- ½ tsp pepper
- 1 tbsp tamari or soy sauce

Instructions
- Add all dry ingredients to a bowl and combine.
- Then add the wet ingredients and give it a good mix with a wooden spoon. Once a dough stars to form, continue kneading with your hands for 5-10 minutes until the dough is stretchy. The kneading is important to active the gluten and get the right consistency.
- Form a flat disc (the dough will be hard to shape but that’s ok, doesn’t have to be perfect) and bake in the oven at 180C for ~40 minutes.
- If you like, cut the seitan into strips and fry in a non stick pan for a couple minutes for a crispier outside.
Notes
You can get seitan powder in most well-organized health stores. It is sometimes also called gluten or vital wheat gluten.
