Smoked Tofu Pasta Salad

This smoked tofu pasta salad makes for a great, healthy lunch to take to work or school. It comes together in only 20 minutes and is a great lunch for when you don't have a microwave around.

What Tofu to Use For This Smoked Tofu Pasta Salad

There are so many different types of tofu out there - firm, extra-firm, silken... For this pasta salad, you want to get firm or extra-firm tofu - silken tofu is great for desserts, but won't work for this recipe.
If you cannot find smoked tofu in your local supermarket, you can totally make it yourself. Just take a block of regular tofu and cut it into cubes. Then add it to a non-stick pan on high heat with a few drops of liquid smoke. Fry the tofu for a couple of minutes, turning it once in a while so that all sides are equally fried. You can add more liquid smoke to your taste.

This Smoked Tofu Pasta Salad Is A Great Meal Prep Lunch

Lately I've been having a lot of pasta salads for lunch. I love pasta salads because they are quick to make and a great, healthy lunch to take to work. For a long time, we didn't have a microwave at the office so I was constantly looking for recipes that also tasted good when cold.
There are so many ways to customize pasta salads. You could add some hummus (either on top or combine it with the lemon juice to make a sauce). You could add some sundried tomato for some additional interesting flavors. Or add walnuts, sesame seeds or almonds for a little bit of crunch.

Smoked Tofu Pasta Salad

  • 2 servings
  • 20 minutes

Ingredients

- 200g smoked tofu
- 200g pasta
- 150g green beans
- 50g olives
- handful of cherry tomatoes
- ½ lemon
- salt and pepper
- optionally: dried herbs or chili flakes

Instructions

  1. Start by washing the green beans, remove the stems and chop into bite sized pieces. Add to a pot with boiling water and cook for 10-15 minutes.
  2. Cook the pasta according to package instructions.
  3. Cut the cherry tomatoes and olives in half and the tofu into small dices.
  4. Add juice of ½ lemon to a mixing bowl with the remaining ingredients and stir to combine.
  5. Season with salt and pepper (and optionally some chili flakes or dried herbs).
  6. Enjoy straight away or store in the fridge or ~4 days.

Notes

If you don’t have smoked tofu, you can fry regular tofu with a few drops of liquid smoke.
