Vegan Stuffed Sweet Potato with White Beans

This vegan stuffed sweet potato with white beans might look fancy, but it's actually so easy to make! I love the combination of sweet potato and peanut butter, have you tried it before? If not, give it a try!

How To Make A Vegan Stuffed Sweet Potato

To make a vegan stuffed sweet potato, you'll need a sweet potato (duh!) and lots of toppings! Here are a few ideas of what you could add to your sweet potato:
  • beans in tomato sauce
  • baked crispy chickpeas
  • kale/spinach
  • guacamole
  • cashew sauce
  • salsa
  • quinoa
  • nuts and seeds
Of course, you can bake the sweet potato in the oven. What I like to do if I'm in a rush is just pop it in the microwave for 5-8 minutes. This cooks the sweet potato a lot faster and it still tastes great! How long your sweet potato actually takes in the microwave to cook really depends on the size of your sweet potato. Make sure to pierce it with a fork before so that the steam can escape.

I love recipes that are versatile so that I can use them in many different meals! For this vegan stuffed sweet potato we are adding white beans in tomato sauce. Why don't you make a little more and save it for the next day to add onto some sourdough bread? I loved beans on toast as a late Sunday breakfast when I was in highschool. Vegan Stuffed Sweet Potato with White Beans

  • 2 servings
  • 20 minutes

Ingredients

for the white beans
- 1 can cooked white beans
- 1 small onion
- 1 clove of garlic
- 1 tbsp tomato paste
- 1 cup pureed tomatoes
- cumin, paprika, salt, pepper
 
for the stuffed sweet potato
- 2 sweet potatoes
- beans/chickpeas in tomato sauce
- peanut butter
- peanuts
- fresh parsley
- salt and pepper

Instructions

  1. Start by washing the sweet potatoes, piercing them with a fork a couple of times. Place them in the microwave and microwave for ~5-8 minutes until the sweet potatoes are cooked through.
  2. Mince the garlic and finely dice the onion. In a pan on medium high heat, saute for 2-3 minutes (adding water as necessary so it doesn’t burn).
  3. Add the tomato paste and 1 tsp cumin and paprika each.
  4. Cook for another 1-2 minutes, then add the beans and pureed tomatoes.
  5. Simmer for ~5 minutes and season with salt and pepper.
  6. Cut the sweet potatoes open, and add the remaining toppings.
  7. Season with salt and pepper and enjoy!

Notes

Depending on the size of your sweet potato, it might take a little longer or shorter in the microwave. If you're unsure, I'd recommend checking after ~5 minutes and then adding more minutes as necessary.
