This simple summer fruit overnight oats recipe will have your kitchen smell like summer! It has been one of my favorite go-to breakfasts and I've been making it almost every week because it is so easy and only takes 15-20 minutes to prepare. These summer fruit overnight oats are great to prepare on a Sunday evening for the upcoming week.

What You Need To Make Summer Fruit Overnight Oats
To make these delicious summer fruit overnight oats, you will need:
- peaches and apricots: Like berries, peaches and apricots come into season in summer. They are sweet, juicy and just create a feeling of summer! When you choose the fruits in the supermarket, go for very ripe ones. Or, if you have some too ripe peaches and apricots at home, this recipe is perfect!
- chia seeds: These go into the peach & apricot jam and also into the overnight oats. Using chia seeds to make fruit jam is a healthy alternative to using preserving sugar.
- banana: Make sure to use an over-ripe banana that you can easily mash with a fork. This adds so much sweetness to the oats!
- oats: You can use your favorite type of oats.
- plant milk: Again, use a plant milk that you like. There are so many different options, like soy milk, rice milk, oat milk, almond milk...
- cinnamon: Yes, this is a summer fruit overnight oats recipe and I am suggesting to add cinnamon! Trust me on this one. It won't taste Christmassy at all, and instead adds a really nice flavor to the overnight oats.
How To Make Peach & Apricot Jam
Before we actually make the overnight oats, we'll prepare the peach & apricot jam. Start by washing ~6 small fruits, remove the seed and cut them into bite-sized pieces. No need to cut them extra small because we will mash them later and they will fall apart while cooking.
Add the fruits to a metal pan (or you can use a metal saucepan) and cook for 10-15 minutes until the fruit pieces are falling apart and you can easily mash them with a fork.
The exact cooking time will depend greatly on the ripeness of your peaches and apricots. Also, if your fruits are not that ripe yet, you might have to add some water to prevent burning. I added ~ ¼ cup of water.
Now you can mash the fruits with a fork or potato masher until no more large chunks remain. It is okay if some small pieces or the skin remain intact.
Transfer the mashed peaches and apricots to a bowl and add the chia seeds. Stir well to combine everything. You can let it sit for ~5 minutes and test the consistency. If it is too liquid still, you can add more chia seeds.
How To Make Summer Fruit Overnight Oats
To make the overnight oats, start by mashing a ripe banana in a large mixing bowl. It is totally fine if some small lumps remain. In fact, I think that makes the overnight oats taste even better. Just make sure you get all the larger pieces.
Next, add the rolled oats, soy milk, cinnamon and chia seeds. Mix well and give it a taste test. You may add some more cinnamon or a liquid sweetener like maple or agave syrup if the banana is not sweet enough.
To assemble, get a mason jar and add some peach & apricot jam to the bottom. Then, add the overnight oats mixture. Divide it evenly between the jars. On top, add the remaining peach & apricot jam.
You can garnish the summer fruit overnight oats with your favorite toppings, like walnuts, almonds, cashews, toasted coconut flakes, peanut butter...
How To Store These Summer Fruit Overnight Oats?
I'd recommend to store the overnight oats in glass mason jars. They can be stored in the fridge for ~4 days. Of course, you can store the peach & apricot jam and the overnight oats mixture separately. But if you already assemble everything, you just need to grab a jar and can enjoy a delicious breakfast.

- 6 peaches and apricots 500-600g
- ⅛ cup chia seeds ~20g
for the overnight oats
- 1 banana ripe
- ⅔ cup plant milk
- ⅔ cup oats ~80g
- 1 tsp cinnamon
- 1 tbsp chia seeds ~10g
To make the peach and apricot jam
- Wash the fruits. Remove the seeds and cut into bite-sized pieces.
- Add to a metal pan (or metal saucepan) and cook for 10-15 minutes until the fruits are soft and slightly falling apart. You can add water to prevent burning.
- Mash the fruits with a fork or potato masher until no large pieces remain.
- Transfer to a bowl and add the chia seeds. Mix everything and let sit for ~5 minutes. Add more chia seeds if the jam is too liquid.
To make the overnight oats mixture
- While the peaches and apricots are cooking, you can prepare the overnight oats. In a mixing bowl, mash the banana with a fork.
- Add the remaining ingredients and combine.
To assemble the summer fruit overnight oats
- Take two mason jars. To the bottom of each, add ~ ¼ cup of the peach & apricot jam.
- Divide the overnight oats mixture evenly between the two jars.
- Top with the remaining jam. You can garnish with walnuts or any other toppings you like.
